Potatoes are the most versatile vegetable that everyone or at least most love. We can boil them, roast them, make a mash or a curry or even just use as a binding agent. No matter how you cook them they just taste delicious. This recipe is a very very easy to make roast with Indian spices. No Indian recipe is complete without turmeric, coriander and chillies. These three spices are indispensable in every home here.
Potatoes – 500 gms
Turmeric powder – 1/2 tsp
Coriander powder – 2 tsp
Red chilli powder – 2-3 tsp
Oil – 2 tbsp
Mustard seeds – 1 tsp
Salt to taste
- Pressure cook or boil the potatoes until just done. Peel the skin and cube them into big bite size pieces.
- Heat oil in a non-stick pan. Add the mustard. Once it crackles, add the potatoes, turmeric, coriander, chilli powder and salt. Mix well.
- Let it slow roast in the pan until a brown-black crust forms on the potatoes. Tastes amazing with rice, especially curd rice.
